Chambers Bay Bourbon


              
             To me one of the best things about bourbon is the history. It has arguably been around as long as this great country has. Bourbon has survived the good, the bad and the ugly to get to this point. Just like this country, bourbon has grown and has inspired whole new generations to be innovative. This is especially true in micro-distilling small craft bourbon to make something unique while adhering to the traditions and laws that make bourbon, bourbon. I am in no way saying all these craft distilleries are putting out good juice but many are. One of the best in my opinion is Chambers Bay Distillery out of University Place Washington.
               Chambers Bay Distillery first began producing whiskey in University Place, Washington in 2014. The company was founded by Jeff Robinette and Alan Davis, and only has four products, but in keeping things simple they have produced amazing bourbon. They age their bourbons through a process called hydrokinetic aging, which basically means aging their whiskey on a barge out on the Puget Sound for a period of time using the sounds natural movements to naturally churn the barrels. By doing it this way they claim they are able to age their whiskey more efficiently. Not to mention the salty air adds a little saltiness to the flavor profile!
               It is crazy to me to think that traditional whiskey wasn’t always aged in a rickhouse. What? Yea crazy right! I recently found out that Kentucky whiskey produced before modern roads and trains often travelled by boat up and down the Mississippi and its tributaries or even across oceans to get it where it need to go, aging it on the water along the way. Only one other major distiller, Jefferson Ocean, is using this method of aging.
               Straight bourbon made entirely in Washington, aged for a minimum of three years in a boathouse on the Puget Sound. It is 47.5% ABV (95 proof), with a light spicy fruity smell comes off the nose. I picture old pirate ship in the Caribbean. This bourbon was fantastic from the first sip with a nice floral woodsy front end that becomes a soft caramel towards the end that sticks with you from sip to sip. I enjoy this bourbon neat but would elevate your Manhattans to a whole new level.
               I can not say enough about how much I enjoy Chambers Bay Bourbon! I love the way its kept and look forward to touring the Distillery this summer. The only down side is costs, around $40 for 375 ml, or half of a regular 750ml bottle. I know it’s a small bottle and well, kinda pricy but is also very tasty and unique. This bottle would make a great addition to your collection as well a fantastic gift idea. I can go on and on about how much I enjoy this bourbon but pour yourself a glass and enjoy, it’s worth it!

Well 80's "Olympias Best Mustache Contest" 2018

My kids are offended with my mustache! They get irritated with random people chatting me up over my ‘stache in the grocery store, picking them up from school, or even walking around downtown Olympia. One of the things they are always saying is why do people keep asking you if you compete? I never really thought about competing, my ‘stache was requested by my fiancé and also I had no idea about how competing works. Hash on the Westside

In addition to good bourbon, I love a great breakfast spot! Unfortunately, there are few real breakfast joints in town. Luckily for us a new spot opened in West Olympia called Hash . Hash opened up over the summer and has been packed ever since! The menu is simple and has something for everyone, including kids, and offers several vegan plates. We went in for Sunday breakfast around 10:30 am and the restaurant was packed with many names on the waiting list. We sat outside and enjoyed the summer sun until our table was ready. The staff were polite and quick. Once seated we got our drinks and looked over the menu. The smells and atmosphere was chill.
